Fermenting under 18˚C ( 65˚F ) produces a very clean, crisp beer with a touch of ester.  Perfect for Kölsch or any style where a dry, clean profile is desired.

GY021 Kölsch Bier GigaYeast produces a moderate amount of sulphide that will dissipate completely.  Ferments cold similar to GY019 Kölsch Bier GigaYeast  to produce crisp tasting lager-like ales.

  • 79% – 83%

Attenuation High Gravity*

  • 76% – 79% (9.6% – 10.1% ABV)

Temperature Range:

  • 15.6˚C – 22˚F (60˚F – 72˚F)

*  Medium Gravity is 14˚ – 16˚Plato / 1.057 – 1.065 SG.  High Gravity is 23˚- 25˚Plato 1.096 – 1.106.

  The working temperature range represents the range at which fermentation for a given strain produces a typical attenuation- not necessarily the ideal temperature for your particular beer style.  As a rule of thumb, start ale yeast fermentation at 20 – 21˚C (68˚ – 70˚F) and then lower or raise temp as desired.  Lager Yeast are typically fermented at 7 – 14˚C (45˚ – 58˚F).  If desired, Lager Yeast can be given a “hot start” at 18-20˚F (65-68˚F) and then lowered to the primary temperature after active fermentation begins (10-20 hours).

    I used this yeast to make a Kolsch and then pitched wort for a Piwo Grodziskie on top of the yeast cake. It fermented relatively fast considering I fermented at 14C for both worts, and I was really impressed with the high level of floculation when the beer reached terminal gravity – you almost don’t need to cold crash. I have slanted some small cultures for future use and will likely only ever use this yeast for any European ale that I make.

    A slow start, fermenting at 15C, but it sure did the job. Racked to secondary, the beer already looks super clear and hit the final gravity quick. Can’t wait to taste it! I’ll definitely use this yeast again.
